• 3 kg of cherries
  • a piece of cinnamon
  • 1,5 kg of sugar
  • a small glass of cherry.

Take away the stalk from the cherries, wash and stone them.

Put them in a big stainless steel saucepan and add the sugar and, if you want, a piece of cinnamon.

Let them cooking for 1 hour and a half, taking away the foam when it comes on the surface.

When it will have the right consistency add the cherries(even if not essential) mix and put out the heat.

Pot it when it is still hot till 1 cm from the board of the jar and close it with an airtight cover.

Turn upside down the jar for 5 minutes: the jam, still boiling,  soak the internal side of the cover.

In this way, we can do a sort of sterilization.
