PUMPKIN WITH RICOTTA FORTE
This is a typical dish of Brindisi.
600 gr of winter pumpkin or genovese
2 salted anchovies without the bones
capers, black olives
1/2 stemb of celery
1 clove of garlic
crouton of home made bread
Let them the anchovy fry in a big pot with some hot oil.
Add the capers, the garlic the minced celery and the sliced onion.
Peel, wash and cut in small cubes the pumpkins.
Add it to the fried mixture eliminating the garlic. Let it brown and add some black olives. Let it cooking for 15 minutes.
Before eliminating from the heat, add a tablespoon full of ricotta forte, salt and pepper.
