• 1kg of mussels
  • 100 gr of flour
  • 2 eggs
  • extravirgin olive oil
  • salt

Clean well the mussels, put them in a pot with a lid and let them

open  over a low heat.

Take the valves away.

In a plate put the flour and in another one the mirepoix egg.

Sprinkle the mussels with the flour and then pass it in the egg.

Then fry them in plentiful hot olive oil.

Serve them hot.
